Skinny Artichoke Parmesan Soup 

Skinny Artichoke Parmesan Soup

Recipe Serving Size: 6 servings

INGREDIENTS

  • 2 Tablespoons olive oil
  • 1 large white onion, diced
  • 3-4 cloves garlic, minced
  • 1 large carrot, peeled & diced
  • 2 quarts chicken broth (or vegetable)
  • 2.5 (12 oz) bags of frozen artichoke hearts
  • 1 large parmesan rind (can be omitted if making vegan – but really infuses the soup with lots of flavor with little to no calories)
  • salt & pepper to taste

DIRECTIONS

  1. Heat oil over low heat                                                                                                                      
  2. Add onion, carrot and garlic – sauté until carrots are soft, onion translucent and garlic fragrant
  3. Add chicken broth and turn heat up to high so that it comes to a rolling boil
  4. Add in the artichoke hearts and reduce heat
  5. Simmer for 20-30 minutes until reduced and flavor is concentrated
  6. Carefully puree the soup to a smooth consistency with a hand blender, regular blender or food processor.
  7. Add salt & pepper to taste
  8. Garnish with fresh grated parmesan
